Add some color to your life with this creamy beet hummus flavored with spices!
Healthy beetroot hummus is the perfect thing to pair with vegetables. It makes for a great snack and is packed full of good fiber. It is also a good source of Protein and Copper, and a very good source of Folate and Manganese.
Super easy, delicious and fast to make, try it!
- 400g can of chickpeas (reserve the liquid)
- 1 garlic clove
- 2 Tbs lemon juice
- 3 Tbs Extra Virgin Olive Oil
- 2 tsp of tahini
- Medium size beetroot, cooked, peeled and cubed
- Pinch of paprika powder
- Pinch of cumin seeds
- Pinch of sea salt
- Black pepper
- Fresh coriander leaves
+ A food processor or blender. I used Vitamix. It gives a super smooth texture.
Drain the chickpeas into a strainer and rinse under cool running water.
Combine the chickpeas, olive oil, tahini, lemon juice, beetroot, spices, garlic, salt, and black pepper in the bowl of the food processor or blender. Add 3 tablespoons of the reserved liquid from the can.
Process the hummus continuously until it becomes very smooth, 1 to 2 minutes. Scrape down the sides of the bowl as needed to integrate any large chunks.
Spoon into serving dish, swirl a little olive oil over the top and sprinkle with paprika and chopped coriander leaves.
Serve with crackers, raw dip vegetables such as carrots, beetroot, capsicum, cucumber or celery, or with pita bread.
