Coconut Berry Breakfast Bowl

IMG_48201What are your plans for the weekend? I’m going to spend it with my family. We will start with a delicious and nutritious Saturday breakfast. Surprise your beloved ones this weekend. It`s easy.

All you need is berries, bananas, coconut yoghurt and some inspiration! Sprinkle your smoothie bowl with muesli, granola or puffed grains, chia seeds, goji berries, favorite fresh fruits and berries, seeds and nuts. Enjoy!

Ingredients

2 Serves

  • 4 Ripe Bananas
  • 2 Cups mixed berries , fresh or frozen. I added raspberries, blueberries and blackberries.
  • 2 heaped Tbs of coconut yoghurt, I like Coyo brand.
  • 2 Tbs granola or muesli, I added mango and nuts crunch from Pure Delish

For serves: heaped spoon of coconut yoghurt, fresh fruits and berries, seeds and nuts, mint leaves.

Put all ingredients in the blender, mix well until smooth and creamy. If you are using a high-speed blender is not necessary to add the liquid in the smoothie. If the mixture is too dry splash 1/3 cup almond milk or drinking water.

Pour coconut berry smoothie in the bowls, top with fruits and berries, sprinkle with granola, seeds and nuts. I did not add sweetener. Mango and nuts crunch is sweet enough.
