Perfect porridge for a healthy way to start the day. This nutritious, filling breakfast will definitely keep you going until lunchtime.
For this recipe I gathered all my favorite superfoods. Full of healthy ingredients this brilliant porridge uses nutrient-packed chia seeds, rich in fiber old fashioned rolled oats, protein boost and amino acids of quinoa and natural sweetness of unrefined flavorful coconut sugar.
But most importantly, it’s just incredibly delicious – berry compote and coconut cream is perfect accompaniment!
- 1 Cup old fashioned rolled oats
- 1/2 Cup white quinoa, rinse thoroughly with cool water
- 2 Tbs Chia seeds
- 4-5 Cups Water
- Pinch of salt

- 2 Cups frozen berries, I use 1 cup of blueberries and 1 cup of raspberries
- Few drops of vanilla extract
- 2 Tbs Demerara sugar

- 2 Tbs Coconut sugar
- 1/2 Cup coconut cream
- 1/2 tsp Cinnamon powder
+ dried fejoa for decore
Place the oats, quinoa, chia and water in a large pan over a low medium heat. Add a pinch of salt and stir well. Bring to a steady simmer for 15 minutes, stirring as often as you can to give you a smooth creamy porridge – if you like your porridge runny, simply add more water until you’ve got the consistency you like.
For berry compote. Place berries and sugar in a sauce pan over a medium heat. Cover and cook stirring gently (try to keep most of them from breaking up), until berries are warm and juices begin to be released, 5 to 7 minutes. Add vanilla extract and stir gently. Serve warm or at room temperature.
To Serve: Pour into bowls, spoon cream and berry compote on top. Sprinkle with coconut sugar and cinnamon powder.
