The shiitake mushroom is a symbol of longevity in Asia because of its health promoting properties, especially boost for the immune system. These meaty and flavorful mushrooms can add so much umami to your dishes, shiitake mushrooms are known for their strong, earthy flavor.
This quick and easy autumn dish can be done in minutes if you have leftover rice. Since I got rice cooker, my life is changed forever, it’s so handy to have any time a cup of perfectly cooked and warm nutritious rice .

Ingredients
350g fresh shiitake, washed and sliced
1 onion, sliced
2 cups cooked rice (I prefer mixed rice, white rice + black rice)
cooking oil
- For Sauce:
2 Tbs soy sauce
1 Tbs sugar
2 teaspoons sesame oil
1 teaspoon minced garlic
black pepper
- To serve:
thinly sliced spring onion
toasted sesame seeds
Directions
- Preheat the skillet on medium high heat, cast iron skillet works the best here. Add the tablespoon of cooking oil and onion. Cook the onion mixing occasionally until it is translucent. Add sliced shiitake and cook until tender and golden brown, 8–10 minutes. Mix all ingredients for sauce and add the sauce to the mushrooms. Mix gently and continue to cook for few more minutes until all sauce is absorbed, shiitake caramelized and glossy. Add rice and mix gently. Warm up the rice (or fry it slightly if you are prefer fried rice). Serve the shiitake rice warm, sprinkle with spring onion and sesame seeds. Enjoy!
