Healthy beetroot hummus is a perfect luscious dip to pair with vegetables. Hummus is probably one of the best known Middle Eastern foods due to its popularity worldwide. Learn how to make it quick and easy.
Ingredients
- 400g can of chickpeas, drained (reserve the liquid)
- 1 garlic clove
- 2 Tbs lemon juice
- 3 Tbs Extra Virgin Olive Oil
- 2 tsp of tahini
- Medium size beetroot, cooked, peeled and cubed
- Pinch of paprika powder
- Pinch of cumin seeds
- Pinch of sea salt
- Black pepper
- Some fresh coriander leaves
+ A food processor or blender. I used Vitamix. It gives a super smooth texture.
Directions
Place all ingredients in the food processor or blender. Add 3 tablespoons of the reserved chickpea liquid.
Process the hummus continuously until it becomes very smooth. Scrape down the sides of the bowl as needed to integrate any large chunks.
Spoon into serving dish, swirl a little olive oil over the top and sprinkle with paprika and chopped coriander leaves.
Serve with crackers or pita bread and raw vegetables such as carrots, beetroot, capsicum, cucumber or celery.
