Ingredients
1 punnet strawberry, hulled and roughly chopped
1 bunch of rhubarb, peeled and chopped
1/2 cup sugar + some for sprinkling
1 teaspoon vanilla extract
1 TBS corn starch
2-3 TBS melted butter
175g ready-rolled puff pastry (half of a standard package), chilled
Directions
- Preheat the oven up to 200C.
- In a bowl mix together chopped strawberry, rhubarb, sugar and starch. Place the mix in a pudding baking dish, drizzle with vanilla essence. Cut the chilled puff pastry into small triangle-shaped pieces and place them over strawberry-rhubarb filling. Generously brush the puff pastry with melted butter and sprinkle with sugar. Bake in preheated oven for about 30 minutes or until golden brown. Serve warm. Enjoy!
