Lazy-girl summer pudding with strawberry and rhubarb. Strawberry and rhubarb are a match made in heaven. Juicy, sweet strawberries and tangy rhubarb come together in this luscious dessert.

Ingredients

  • 1 punnet strawberry, hulled and roughly chopped

  • 1 bunch of rhubarb, peeled and chopped

  • 1/2 cup sugar + some for sprinkling

  • 1 teaspoon vanilla extract

  • 1 TBS corn starch

  • 2-3 TBS melted butter

  • 175g ready-rolled puff pastry (half of a standard package), chilled

Directions

  • Preheat the oven up to 200C.
  • In a bowl mix together chopped strawberry, rhubarb, sugar and starch. Place the mix in a pudding baking dish, drizzle with vanilla essence. Cut the chilled puff pastry into small triangle-shaped pieces and place them over strawberry-rhubarb filling. Generously brush the puff pastry with melted butter and sprinkle with sugar. Bake in preheated oven for about 30 minutes or until golden brown. Serve warm. Enjoy!
