Peel the sweet potatoes. Cut them into chunks and place into a steamer for about 20 minutes, until they become really soft. Mash a hot sweet potato using potato masher until smooth.
Mix well almond meal, coconut and pitted diced dates in your food processor till cous-cous condition. In a medium mixing bowl stir together sweet potato mash, dates mix and remaining ingredients, except cashew crumbs.
Chill into freezer for 30.
Roll the balls with the palm of your hands. To finish the balls roll in cashew crumbs.
Keep in the fridge. Enjoy!
